Hello beautiful community,

I am having a slight issue with my carbon steel pan. I have seasoned it properly using sunflower oil (I can't really find grapeseed oil) and the oven method.

After cooking, always with fat in in, I clean it with water and a sponge, then wipe everything out, then heat it up to remove any moisture.

When I continue to cook in it and make... for example, an omlette, the food taste rancid/somewhat metallic and it appears that some of the seasoning comes in in the food. This ruins the whole cooking experience.

Could you please give some advice on:

  1. What am I doing wrong?
  2. What could I do better?

You're not using high enough heat while seasoning or you're using too much oil, I would bet that your seasoning is spotty in some places and breaking off.

It may also be that you need to use soap while washing; some of the rancid taste might be simply odor from past meals, modern soap won't ruin your cast iron and will help clean it better.

Sunflower is more than adequate btw.
