I have a kitchen remodel (including range/oven) planned. Currently we have a "vintage" electric stove. I am deciding between gas or induction.
I liked gas in a previous house. However, I have reservations about combustion gases and unhealthy air quality. I heard great things about induction, but I had reservations about replacing cookware (before my budget increased). I haven't used induction.
Update
A friend used induction, and she hated it at first, but then liked it. Induction ranges are not common in the U.S.
If you are a cook, and have used an induction system, "Is it responsive?", "Is temperature controllable?", "Is it durable and easy to clean?".
I want to test drive an induction range, so I'll check with local shops.
Another Update
Somewhere among my bookmarks is an article about particulate matter and CO generated by gas ranges.
I like things I've read about induction ranges. Efficiency, safety, control, etc.
