I have a 10-year French resident card and a Pakistani passport. Can I travel to the UK for one week without a visa, accompanied by my French husband and our French children?

Neither your status in France nor your relationship with a French citizen exempts you from any visa requirement to enter the UK. The only way in which EU freedom of movement law could have an impact is if you and your spouse had been living in the UK before 2020 but this doesn't seem to be the case. As a Pakistani citizen, you will therefore need to apply for a Standard visitor visa.

As French citizens, your husband and children do not need a visa for the same visit but they need a passport (a carte d'identité is not enough).

That's not relevant for this trip but note that your French residence permit does exempt you from the Direct Airside Transit visa Pakistani citizens have to get for a layover at a UK airport.

UK is not in European Union anymore. So, the freedom of movement option does not apply. You have to apply for visa.

Considering your situation, it will be very easy and straight forward to get a UK visa.
