My flight was cancelled whilst we were on the plane. The reason the pilot gave was an issue opening and closing the cargo door. The flight was rescheduled for the following evening, I've applied for compensation but easyJet have to told it was due to bad weather. The weather wasn't a problem and I wonder where I go next with this.

According to EU261/2004, Article 5(4), the airline has an obligation to provide evidence. In such cases if they claim that weather was the main reason, they should provide weather report or operation reports from where it can be concluded.
